Brewing temperature will vary according to tea type. Generally, the greener the tea the cooler the water should be. For a lighter, more floral cup of tea use cooler water. For a darker, more robust cup of tea use hotter water.
We realize you might not always have a thermometer on hand. In that case, you may refer to these ancient Chinese sayings that differentiate the sight and sound of the water appropriate for each tea:
